The presentations held at a conference as part of the ‘Tag der Franken’ (Franconians’ Day) organised by the Central Franconian association responsible for fostering regional values and traditions are collated in this book. They address the question of how Franconia’s culinary identity developed and how its inhabitants ate over the course of history. Supplemented by further essays, the book covers the time from antiquity to the present, providing an overview of the changing dietary situation in different epochs and social strata.
